This week I wanna give you a quickie Tex-Mex meal to try on your family/friends/self:
1 can Fire Roasted “Tex-Mex” diced tomatoes
4 boneless skinless chicken breast halves
1 c shredded mexican blend cheese
preheat oven to 375, spray small glass baking dish with non-stick spray, line glass dish with chicken breasts, pour entire can contents over chicken (I spooned it out so it would even cover the chicken), then cover with cheese. cover dish with aluminum foil, and bake for 45 minutes, or until chicken is done. Serve with refried beans & some of my Raider Rice* (see below), and some warmed flour tortillas.
make as much rice as you would like-either plain white, or whole grain brown, cook according to directions. When done, add cumin & Adobo seasoning salt, a bit of mexican oregano, and a dash of garlic powder, again, all according to your own taste, stir up, then serve.
Voila! You have a delish Tex-Mex meal your family will enjoy.
